WEEK OF APRIL 24, 2022:

Our household tested positive for covid on April 21. We rested, ordered a lot of takeout and ate a lot of frozen items we had saved over the last few months.

 

WEEK OF APRIL 17, 2022:

Breakfasts:

School Lunches:

  • Mini Apple Muffins (recipe above)
  • Kale Caesar Salad *turned into wraps*
  • 5-minute yogurt (recipe above)
  • Strawberry Beet Fruit Leather (recipe above)
  • Celery, carrot, cucumber sticks with Follow Your Heart "Ranch"

 

WEEK OF APRIL 10, 2022:

Breakfasts:

  • Chilled Caprese Pasta Salad (recipe above)
  • Honey Mustard "Chicken" Wraps (recipe above)
  • Crunchy Snack Mix (recipe above)
  • Orange + apple slices
  • Veggie sticks with hummus (recipe above)

 

WEEK OF APRIL 3, 2022:

Breakfasts:

 

Dinners (leftovers are used for lunches):

 

Snacks:

 

School Lunches:

  • Easy Garlic Knots (we sub gf pizza dough)
  • Curried "Chicken" Salad (my own recipe):
    • 1 pack Daring original “chicken” - sautéed + chopped
    • 1/2 apple - diced
    • 3 celery stalks - diced
    • 1/2 small red onion - diced
    • 4 medjool dates - diced
    • 4 tbsp. Vegan mayo
    • 1 tbsp. Curry powder
    • **Mix together in a bowl. Store in fridge. Use for sandwiches, wraps, crackers, etc.
  • Almost-Everything Trail Mix (recipe above)
  • Bananas with almond butter
  • Veggie sticks with Yumm Sauce (recipe above)
  • Fresh Spring Rolls (see recipe above)
